Ingredients Preparation
1 medium head cabbage,
cut into 6 wedges
Olive oil, to drizzle
½ cup caramelised balsamic vinegar
1 tbsp chopped dill
1 tbsp chopped chives
Freshly grated parmesan, to garnish

1. Preheat oven to Hot air 210°C.
2. Brush the cabbage with olive oil, then place on a hot griddle plate and cook
for a few minutes each side until lightly coloured. Place the wedges on an
enamelled baking tray and cook on shelf 2 for 40 minutes until softened
and deeply burnished.
3. Remove from oven and drizzle over balsamic vinegar. Set aside for a few minutes.
To finish

1. Scatter over chopped herbs and dredge with freshly grated parmesan.
