Ingredients Preparation
4 eggs
125ml milk
40ml cream
50g melted butter, divided
75g plain flour
20g icing sugar
Clotted cream, to serve
Lemon zest, to garnish

1. Preheat oven to Hot air 200°C.
2. Whisk eggs with milk, cream and 30g melted butter. Add flour and sugar
and blend until smooth.
3. Heat a 20cm ovenproof frypan over high heat, add remaining melted butter
and swirl to coat the base. Pour the batter into the pan, place in oven on shelf 2
and cook for 20 minutes until it is puffed and brown around the edges.

To finish
1. Serve immediately with a dollop of cream and some lemon zest.
