 
		
	Sweet and salty flavours from the sea, these baby clams pair perfectly with iconic XO sauce for a speedy entree that punches well above its weight to deliver delicious flavours in no time at all. Prepare to get messy.

| Ingredients | Preparation | 
| 1kg pipis, cleaned 100ml white wine 4 tbsp XO chilli sauce 2 tbsp soy sauce 2 spring onions, finely sliced on an angle | 1. Preheat oven to Hot air 100°C + 100% humidity. 2. Place pipis in the stainless steel unperforated tray with wine , XO sauce and soy sauce and toss to combine. Place in oven on shelf position 2 and cook until shells open, about 6 to 8 minutes. 3.
