Ingredients Preparation
1kg mixed mushrooms (king brown,
shimeji, portabella, button)
2 heads young garlic, halved
1/3 cup olive oil
Sea salt and freshly ground black
pepper, to season
1 lemon, juiced and zested
1 tbsp parsley, chopped

1. Preheat oven to Hot air 200°C.
2. Spread out mushrooms and young garlic on a lined enamelled baking tray,
drizzle with oil and season with salt and pepper. Cook for 30 minutes on
shelf 2 until golden. Remove from oven.

To finish
1. Place mushrooms and garlic on a serving platter, add lemon zest and juice, chopped parsley and season with extra salt and pepper.
