Soft boiled eggs and smoked salmon smorrebrod

Ingredients Preparation
8 eggs at room temperature
1 avocado, peeled
and cut into quarters
8 slices smoked salmon
8 slices dark rye bread, toasted
1 cup fermented sauerkraut
with live cultures
1 bunch radishes, quartered
Caperberries to garnish
1. Set oven to Hot air 100°C + 100% humidity.
2. Place eggs in oven on a stainless steel perforated tray on shelf position 2
and cook for 6 minutes. Refresh in cold water, then set aside until cool
enough to peel.


To finish
1. Arrange all of the ingredients on a large platter for guests to help themselves.
